A little inspiration from one of my fave cuisines… Mexican!
This low-carb, healthy alternative borrows a little bit of inspiration from Mexican nachos, too! If you want them to be even more nacho-like, just cut the pepper halves into quarters. Arrange the pepper quarters on a baking sheet as you would a pile of nachos, top with meat mixture and follow the baking directions below.

This savory twist on the Philly cheesesteak sandwich will quickly become a family favorite that even your pickiest of eaters will enjoy!
This dish can also be prepped ahead of time! Simply follow the recipe up until you are to bake the peppers. Cover with aluminum foil and store in the refrigerator until ready to bake and serve.

Wine Pairing
Philly cheesesteak nachos pair perfectly with a red Cabernet. Or so I hear… Honestly, I am not a red wine fan. I much prefer the sweetness of a moscato. But, the experts say that Cabernet, with it’s acid and tannins, will complement the texture and fat in the sandwich. Many Cabernets also have a green pepper flavor that will compliment this dish well.
Beer Pairing
Okay, in all honesty, again, I am not a beer drinker. I consulted the experts again, and I hear that Philly cheesesteaks pair perfectly with a pale ale, American, Belgian or otherwise because of it’s slight hoppiness.
However, you like your Philly cheesesteak, whether with a Cabernet, pale ale, or just a glass of Diet Coke (like me!), you’re going to love this recipe!

Philly Cheesesteak Pepper Nachos
Ingredients
- 1 lb roast beef I use pre-sliced deli meat!
- 1 green bell pepper
- 1 sweet onion
- 4 tri-color bell peppers
- 4 oz mushrooms
- 8 slices provolone cheese
- 1 tsp salt
- 1 tsp garlic powder
Instructions
- Preheat oven to 375ยฐ
- Wash and dry all produce.
- Slice onion and green bell pepper. Slice mushrooms or drain if using canned mushrooms.
- Cut tri-color bell peppers in half, and remove seeds.
- Heat a large drizzle of olive oil in large pan over medium heat. Add onions and bell peppers. Cook until softened and onions are translucent.
- Add mushrooms and sliced roast beef to pan with onions and mushrooms. Cook until roast beef is warmed through. Season with salt and garlic powder.
- Spoon meat and vegetable mixture into bell pepper halves.
- Cook 10-12 minutes. Remove from oven.
- Top with provolone cheese slices.
- Return to oven, and bake 5 minutes or until cheese is melted.
