Philly Cheesesteak Pepper Nachos

Ingredients
  

  • 1 lb roast beef I use pre-sliced deli meat!
  • 1 green bell pepper
  • 1 sweet onion
  • 4 tri-color bell peppers
  • 4 oz mushrooms
  • 8 slices provolone cheese
  • 1 tsp salt
  • 1 tsp garlic powder

Instructions
 

  • Preheat oven to 375°
  • Wash and dry all produce.
  • Slice onion and green bell pepper. Slice mushrooms or drain if using canned mushrooms.
  • Cut tri-color bell peppers in half, and remove seeds.
  • Heat a large drizzle of olive oil in large pan over medium heat. Add onions and bell peppers. Cook until softened and onions are translucent.
  • Add mushrooms and sliced roast beef to pan with onions and mushrooms. Cook until roast beef is warmed through. Season with salt and garlic powder.
  • Spoon meat and vegetable mixture into bell pepper halves.
  • Cook 10-12 minutes. Remove from oven.
  • Top with provolone cheese slices.
  • Return to oven, and bake 5 minutes or until cheese is melted.
  • Enjoy!
